...with a light garlic tomato sauce. This is a great quick seafood dinner.
4 cloves garlic, chopped
2 green onions, chopped
1 package TJs frozen scallops
1/2 cup tomatoes, chopped
handful fresh parsley, chopped
1/3 cup veggie broth
-Place frozen scallops in a bowl in the sink and run cool water over them for a few minutes (this starts the defrosting process)
-Saute garlic and onions together for about 3 minutes on low low-medium heat so garlic doesn't burn
-Add scallops and continue to saute for another 3 minutes
-Add broth, tomatoes, and parsley.
-Cover, continue to saute on medium heat until scallops are fully cooked (around 10-15 minutes)
I served this over pasta, but any grain would do. Perfect with a glass of white wine and good conversation!

yum...but,are you sure those were scallops???
ReplyDeleteSometimes, they cut up shark meat or a fishmeat which has the same consistency and says it's scallops.
Hilary will be in town tomorrow night, I believe..maybe you can cook for her or take her to a table for "more than one".
I could probably do this recipe with cut up chicken also?
